  • 2 tbsp butter
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 3 medium potatoes, peeled and diced
  • 1/2 cup cooked wild rice
  • 1 tsp fresh thyme leaves
  • 1 cup heavy cream
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. Start by heating a large pot over medium-high heat. Add the ground Italian sausage and brown it evenly.
  2. In the same pot, reduce the heat to medium, add butter, and sauté the diced onion, carrots, and celery for 6-8 minutes until softened.
  3. Sprinkle flour over the sautéed vegetables, stirring well to create a roux.
  4. Gradually pour in chicken broth, adding the diced potatoes and thyme, bringing mixture to boil, then simmering until tender.
  5. Stir in cooked wild rice and browned sausage, simmering for an additional 10 minutes.
  6. Finally, add heavy cream, salt, and black pepper, simmering gently to avoid boiling.
  7. Serve warm with optional parsley garnish.
