Description

This scrumptious Onion and Chicken Stew is perfect for anyone looking for a simple yet hearty meal that doesn’t compromise on taste.

Ingredients

Scale
  • 2 pounds chicken thighs (bone-in, skin-on)
  • 3 large yellow onions, thickly sliced
  • 4 garlic cloves, smashed
  • 3 tablespoons olive oil
  • 3 cups chicken broth
  • 2 sprigs fresh rosemary
  • 1 ½ teaspoons salt
  • ½ teaspoon black pepper

Instructions

  1. Begin by heating your heavy pot over medium heat for about 2–3 minutes. Once it’s hot, drizzle in 3 tablespoons of olive oil. Next, add the chicken thighs skin-side down into the pot. Sear them for about 5 minutes per side, or until they achieve a golden-brown color. This step is crucial as it adds flavor to the dish. Once browned, remove the chicken from the pot and set them aside temporarily.
  2. In the same pot, without cleaning it, add the thickly sliced onions and smashed garlic cloves. Cook them for about 5–7 minutes, stirring occasionally until the onions are softened and translucent. The fond left from the chicken will enhance the flavor of the onions as they cook. This beautiful aroma will fill your kitchen in no time!
  3. Now, return the golden chicken to the pot, placing it among the sautéed onions and garlic. Carefully pour in the chicken broth, ensuring the chicken is nestled within the mixture. Add the sprigs of fresh rosemary on top, and season everything with salt and black pepper. Stir gently but ensure the chicken stays mostly on top to allow it to absorb the flavors while cooking.
  4. Bring everything to a gentle simmer, then cover the pot and reduce the heat to low. Let the stew cook slowly for 40 minutes. This method allows the chicken to become fork-tender and the flavors to meld beautifully together. After simmering, carefully remove the rosemary sprigs and taste the stew, adjusting the seasoning if necessary.
  5. Once your Onion and Chicken Stew is ready, ladle it into bowls and serve hot. This stew pairs wonderfully with crusty bread or a bowl of steamed rice to soak up the delicious broth.

Notes

For a deeper flavor, consider browning the chicken well before adding liquids. Rest the stew for about 10 minutes before serving; this helps enhance the flavors. If you find the stew is too thick, simply add a little more chicken broth to achieve your desired consistency.
