- 2 lbs boneless skinless chicken thighs, cut into large chunks
- 12 oz cremini or button mushrooms, sliced
- 2 tablespoons olive oil
- 3 shallots, thinly sliced
- 1 tablespoon butter
- 1 tablespoon roasted garlic butter
- 1/2 cup sun-dried tomatoes, sliced
- 3 cups chicken broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 1 cup heavy cream
- 3 cups fresh baby spinach
- 2 cups cooked white rice
- 2 cups crispy fries, freshly cooked
- Parmesan crisps, for topping
- Hot honey, for light drizzle
Instructions
- Begin your culinary journey by heating the olive oil and butter in a skillet over medium heat. Once the oil is shimmering and the butter is fully melted, add the thinly sliced shallots and cook for about 10 to 12 minutes until deep golden brown. Transfer the caramelized shallots to your slow cooker.
- Add the large chunks of boneless skinless chicken thighs to the slow cooker, followed by the sliced mushrooms, sun-dried tomatoes, chicken broth, Worcestershire sauce, paprika, salt, and pepper. Stir well, cover, and set on LOW for 5 to 6 hours or HIGH for 3 to 4 hours.
- After cooking, uncover the slow cooker and add a tablespoon of roasted garlic butter and the heavy cream. Stir, cover again, and cook for an additional 20 minutes. Fold in fresh baby spinach and let it wilt for just a couple of minutes.
- To serve, spoon the stroganoff over white rice and add crispy fries on the side. Top with Parmesan crisps and drizzle with hot honey.
Notes
For best results, choose chicken thighs, as they remain juicy and tender. Adjust the cooking time based on your slow cooker.
