Instructions

  1. Preheat your oven to 400°F (200°C). Take your medium sweet potatoes and give them a good scrub under running water to remove any dirt. Once cleaned, pierce each potato a few times with a fork to allow steam to escape while roasting. For added flavor, rub the potatoes with olive oil, ensuring they are well coated, and then place them on a baking sheet.
  2. Pop the baking sheet into your preheated oven and allow the sweet potatoes to bake for about 45–55 minutes. They are done when they are fork-tender and the edges have caramelized slightly.
  3. While the sweet potatoes are roasting, heat a tablespoon or two of olive oil in a skillet over medium heat. Once hot, add in your lean ground turkey, breaking it into smaller pieces as it cooks. Sprinkle in the chili powder, garlic powder, smoked paprika, and season with salt and pepper. Stir the mixture continuously for about 6–8 minutes until the turkey is fully cooked and browned.
  4. With your sweet potatoes roasty and turkey cooked, it’s time to prepare the toppings. Dice your fresh tomato, slice the green onions, and cut the avocado into thin slices.
