Cranberry Apple Twice-Baked Sweet Potatoes

A delightful side capturing the essence of fall with sweet potatoes, tart cranberries, and juicy apples.


Ingredients

  • 2 large sweet potatoes
  • 1 cup fresh or frozen cranberries
  • 1 apple, diced
  • 2 tbsp butter
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • 2 tbsp maple syrup
  • Salt, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Pierce the sweet potatoes with a fork and bake for 45 to 50 minutes until tender. Allow to cool.
  2. Melt butter in a skillet, add diced apples and cranberries, cinnamon, nutmeg, and salt. Cook for 5-7 minutes, then add maple syrup.
  3. Cut sweet potatoes in half, scoop out flesh and mash with half of the fruit filling. Refill skins and top with remaining filling. Bake for an additional 10-12 minutes.
