- 2 large sweet potatoes
- 1 cup fresh or frozen cranberries
- 1 apple, diced
- 2 tbsp butter
- ½ tsp cinnamon
- ¼ tsp nutmeg
- 2 tbsp maple syrup
- Salt, to taste
Instructions
- Preheat your oven to 400°F (200°C). Pierce the sweet potatoes with a fork and bake for 45 to 50 minutes until tender. Allow to cool.
- Melt butter in a skillet, add diced apples and cranberries, cinnamon, nutmeg, and salt. Cook for 5-7 minutes, then add maple syrup.
- Cut sweet potatoes in half, scoop out flesh and mash with half of the fruit filling. Refill skins and top with remaining filling. Bake for an additional 10-12 minutes.
