- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup orange juice
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon orange zest
- 1 1/2 cups fresh cranberries, halved
- 3/4 cup chopped walnuts, toasted
- 1 tablespoon coarse sugar (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk orange juice, melted butter, egg, vanilla extract, and orange zest.
- Mix wet ingredients into dry ingredients until just combined; do not overmix.
- Fold in cranberries and walnuts gently.
- Pour batter into the prepared pan and sprinkle with coarse sugar, if desired. Bake for 55 to 65 minutes.
- Cool in the pan for 10 to 15 minutes, then transfer to a wire rack to cool completely.
