Description

This delicious Cranberry Walnut Bread combines tart cranberries and rich walnuts for a comforting breakfast delight.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup orange juice
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange zest
  • 1 1/2 cups fresh cranberries, halved
  • 3/4 cup chopped walnuts, toasted
  • 1 tablespoon coarse sugar (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk orange juice, melted butter, egg, vanilla extract, and orange zest.
  4. Mix wet ingredients into dry ingredients until just combined; do not overmix.
  5. Fold in cranberries and walnuts gently.
  6. Pour batter into the prepared pan and sprinkle with coarse sugar, if desired. Bake for 55 to 65 minutes.
  7. Cool in the pan for 10 to 15 minutes, then transfer to a wire rack to cool completely.
