  • Butternut squash puree – roasted and blended in advance for convenience.
  • Heavy cream + chicken broth – creates a rich, silky base.
  • Fresh garlic – for aromatic depth.
  • Fresh sage and thyme – classic fall herbs.
  • Olive oil, salt, and pepper – the basics for flavor and cooking.

Instructions

  1. Begin by heating a few tablespoons of olive oil in a large skillet over medium heat. Once the oil is fragrant and shimmering, remove the casings from your Italian sausage. Slice the sausage into bite-sized pieces, and add it to the skillet. Allow it to brown for about 5–7 minutes, stirring occasionally to ensure even cooking.
  2. With the sausage nicely browned, it’s time to incorporate the potato gnocchi along with the heavy cream and chicken broth. Stir everything well to combine, then bring the mixture to a gentle boil. Once boiling, reduce the heat, cover the skillet, and let it simmer for about 5 minutes.
  3. After the gnocchi has simmered, mix in your homemade butternut squash puree. Additionally, add minced garlic to the skillet. Continue simmering for another 3–5 minutes until the gnocchi are tender and the sauce begins to thicken.
  4. Just before serving, fold in half of your fresh sage and thyme. Finish it off with a pinch of salt and freshly cracked black pepper to taste.

Adjust the seasoning and sauce consistency as needed, using more broth or cream if it gets too thick.
