- 225g fettuccine pasta
- 2 boneless skinless chicken breasts
- 1 ½ tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter (for searing)
- 2 tablespoons unsalted butter (for sauce)
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 ½ cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 tablespoons fresh chopped parsley
- Salt and black pepper, to taste
Instructions
- Begin by patting the chicken breasts dry with a paper towel. Generously coat both sides of the chicken with Cajun seasoning and let sit for 10 minutes.
- Heat olive oil and 1 tablespoon of butter in a skillet. Sear the chicken for 5–6 minutes on each side until cooked through, then rest for a few minutes.
- While the chicken is searing, boil salted water and cook the fettuccine according to package directions, reserving 1 cup of pasta water.
- In the same skillet, melt 2 tablespoons of unsalted butter and sauté minced garlic. Pour in heavy cream, bring to a simmer, and stir in cheeses until melted.
- Add drained fettuccine to the skillet and toss with sauce, adding reserved pasta water for desired consistency.
- Slice the chicken and place over the creamy fettuccine, garnishing with parsley and extra Parmesan if desired.
Notes
Ensure to use fresh mozzarella for best melting quality.
