Ingredients

  • 225g fettuccine pasta
  • 2 boneless skinless chicken breasts
  • 1 ½ tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter (for searing)
  • 2 tablespoons unsalted butter (for sauce)
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh chopped parsley
  • Salt and black pepper, to taste

Instructions

  1. Begin by patting the chicken breasts dry with a paper towel. Generously coat both sides of the chicken with Cajun seasoning and let sit for 10 minutes.
  2. Heat olive oil and 1 tablespoon of butter in a skillet. Sear the chicken for 5–6 minutes on each side until cooked through, then rest for a few minutes.
  3. While the chicken is searing, boil salted water and cook the fettuccine according to package directions, reserving 1 cup of pasta water.
  4. In the same skillet, melt 2 tablespoons of unsalted butter and sauté minced garlic. Pour in heavy cream, bring to a simmer, and stir in cheeses until melted.
  5. Add drained fettuccine to the skillet and toss with sauce, adding reserved pasta water for desired consistency.
  6. Slice the chicken and place over the creamy fettuccine, garnishing with parsley and extra Parmesan if desired.

Notes

Ensure to use fresh mozzarella for best melting quality.
