  • 225g fettuccine pasta
  • 2 boneless skinless chicken breasts
  • 1 ½ tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter (for searing)
  • 2 tablespoons unsalted butter (for sauce)
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh chopped parsley
  • Salt and black pepper, to taste

Instructions

  1. Start by patting the chicken breasts dry with a paper towel. Sprinkle the Cajun seasoning generously on both sides of the chicken. Let the seasoned chicken rest at room temperature for about 10 minutes.
  2. Heat the olive oil and one tablespoon of unsalted butter in a skillet over medium-high heat. Place the seasoned chicken in the skillet. Cook for about 5–6 minutes per side until browned and cooked through. Remove from skillet and let it rest.
  3. Bring salted water to a boil in a large pot and add the fettuccine pasta. Cook until al dente. Reserve one cup of pasta water before draining.
  4. Melt the remaining two tablespoons of butter over medium heat in the same skillet. Add the minced garlic and sauté for about one minute until fragrant.
  5. Pour the heavy cream into the skillet and bring it to a simmer. Gradually add the shredded mozzarella and grated Parmesan cheese, mixing until the cheese melts smoothly.
  6. Add the cooked fettuccine to the sauce, tossing to coat evenly. Add reserved pasta water if the sauce is too thick.
  7. Slice the rested chicken into strips and arrange on top of the creamy pasta. Garnish with freshly chopped parsley and extra Parmesan cheese if desired.

Notes

Make sure to let the chicken rest after cooking for juiciness. Don’t rush the cheese melting process.
