  • ½ cup freshly grated Parmesan cheese
  • ¾ cup shredded mozzarella cheese
  • 1 ½ tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • ½ teaspoon crushed red pepper flakes (optional)
  • 1 medium tomato, diced
  • 2 tablespoons fresh parsley, chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Begin by cutting the chicken breast into bite-sized pieces. Toss the chicken pieces with Cajun seasoning, salt, and olive oil. Marinate for 10-15 minutes.
  2. Boil salted water in a large pot and cook linguine until al dente, reserving ½ cup of the pasta water before draining.
  3. In a skillet, heat olive oil and sear the marinated chicken until fully cooked, about 5-7 minutes.
  4. Add butter to the same skillet and melt. Then, sauté minced garlic until fragrant.
  5. Pour in heavy cream, bring to a simmer, and stir in Parmesan and mozzarella until melted.
  6. Add drained linguine to the sauce, adjust consistency with reserved pasta water as needed, and fold cooked chicken back in.
  7. Garnish with diced tomatoes and parsley, serve hot.
