- 8 ounces linguine pasta
- 1 cup heavy cream
- 4 cloves garlic, minced
- ½ cup freshly grated Parmesan cheese
- ¾ cup shredded mozzarella cheese
- 1 ½ tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 tablespoon butter
- ½ teaspoon crushed red pepper flakes (optional)
- 1 medium tomato, diced
- 2 tablespoons fresh parsley, chopped
- Salt, to taste
- Black pepper, to taste
Instructions
- Begin by cutting the chicken breast into bite-sized pieces. Toss the chicken pieces with Cajun seasoning, salt, and olive oil. Marinate for 10-15 minutes.
- Boil salted water in a large pot and cook linguine until al dente, reserving ½ cup of the pasta water before draining.
- In a skillet, heat olive oil and sear the marinated chicken until fully cooked, about 5-7 minutes.
- Add butter to the same skillet and melt. Then, sauté minced garlic until fragrant.
- Pour in heavy cream, bring to a simmer, and stir in Parmesan and mozzarella until melted.
- Add drained linguine to the sauce, adjust consistency with reserved pasta water as needed, and fold cooked chicken back in.
- Garnish with diced tomatoes and parsley, serve hot.
Notes
You can swap chicken for shrimp or vegetables for a vegetarian option.
