Ingredients

  • 300 g penne pasta, cooked and drained
  • 250 g lump crab meat (fresh or canned)
  • 1 cup bell peppers (red, yellow, green), diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup celery, diced
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Extra paprika for color

Instructions

  1. Start by boiling a large pot of salted water. Once boiling, add the penne pasta and cook according to the package instructions until al dente. Once cooked, drain the pasta using a colander and rinse it under cold water to stop the cooking process.
  2. In a large mixing bowl, whisk together the mayonnaise, sour cream, Cajun seasoning, lemon juice, garlic powder, and paprika. Ensure the mixture is smooth and adjust seasoning with salt and pepper.
  3. Add the cooled pasta, lump crab meat, diced bell peppers, finely chopped red onion, and celery to the bowl with the dressing. Gently fold the ingredients together, ensuring an even coating.
  4. Once combined, cover the salad and refrigerate for at least an hour. Before serving, taste for seasoning and adjust if necessary. Garnish with fresh parsley and extra paprika.

Notes

This salad can be made a day in advance; it actually tastes better after the flavors have melded.
