- 2 tbsp olive oil
- 2 chicken breasts, cut into bite-sized pieces
- Salt and freshly ground black pepper, to taste
- 1 tbsp garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- Fresh parsley, chopped, for garnish
Instructions
- Begin by boiling a large pot of salted water. Add the penne pasta and cook according to the package instructions until al dente. Drain the pasta well, but remember to reserve 1/2 cup of the cooking water as it tops the dish at the end, providing texture and flavor adjustment.
- In a large skillet, heat the olive oil over medium heat. Season your bite-sized chicken with salt and pepper, then add it to the heated oil. They’re done within 5-7 minutes once they’ve achieved a golden brown color and are fully cooked through. Remove the chicken and set aside in a bowl for later use.
- Using the same skillet, sauté the minced garlic until fragrant — about 1 minute. Enhance this aromatic base by stirring in the chicken broth and heavy cream. Allow this mix to simmer for a few minutes, thickening as it cooks.
- As the sauce begins to thicken, stir in the Parmesan cheese and Italian seasoning, adding red pepper flakes if you prefer a touch of heat. Reintroduce the cooked pasta and chicken to the skillet, tossing them in the creamy sauce until everything is evenly coated. If necessary, gradually mix in the reserved pasta water until desired creaminess is achieved, then serve hot with a sprinkle of fresh parsley.
