  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Begin by heating the olive oil in a large skillet over medium heat. Once the oil is hot, add the diced onion and sauté it for approximately 3–4 minutes until it becomes soft and translucent.
  2. Next, incorporate the sliced mushrooms into the skillet. Cook them for about 5–7 minutes or until they are golden and have released their moisture.
  3. Once the mushrooms are nicely browned, add the chopped spinach to the skillet. Stir it gently until the spinach is wilted.
  4. In a large mixing bowl, combine the shredded chicken, cottage cheese, and the mushroom-spinach mixture. Season with salt and pepper to taste.
  5. Transfer your combined mixture to a greased baking dish, spreading it out evenly. Sprinkle half of the shredded mozzarella on top.
  6. Pop your baking dish into the preheated oven and let it bake for 20 to 25 minutes.
