Instructions
- Start by heating the olive oil in a large skillet over medium heat. Once the oil shimmers, add the diced chicken breasts. Season with minced garlic, salt, black pepper, and smoked paprika. Sauté the chicken, stirring occasionally, until it's fully cooked and lightly golden brown—this should take about 7 to 8 minutes. The spices will add a depth of flavor to the chicken, infusing the dish with a robust taste.
- Once the chicken is browned and cooked through, it's time to add the fresh spinach. Stir it into the skillet and let it cook until just wilted, which should take about 1-2 minutes. The spinach will shrink down significantly and incorporate well with the chicken. Once cooked, remove the chicken-spinach mixture from the skillet and set it aside.
- In the same skillet, melt the butter over medium heat. Once melted, add the flour and whisk continuously for about a minute to form a roux. Slowly pour in the whole milk while whisking to avoid lumps. Keep whisking until the mixture thickens, which should take around 2-3 minutes. Then, reduce the heat to low and add in the shredded mozzarella and grated Parmesan cheese, stirring until they melt and create a smooth, creamy sauce.
- Return the chicken-spinach mixture back into the skillet with the cheese sauce. Mix everything thoroughly, ensuring that the chicken and spinach are well coated with the creamy goodness. Now, warm the tortillas slightly in a microwave or skillet to make them more pliable. Fill each tortilla with a generous portion of the creamy chicken-spinach filling and roll them tightly. Finally, grill the wraps in the skillet for 2–3 minutes on each side until they’re golden and crisp.
