- 2 chicken breasts
- 250g penne pasta
- 3 garlic cloves, minced
- 2 tablespoons butter
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon Italian seasoning
Instructions
- Start by bringing a large pot of salted water to a rolling boil. Once boiling, add the penne pasta and cook it according to the package instructions until it reaches al dente texture. This usually takes about 8 to 10 minutes. After cooking, remember to reserve half a cup of the pasta water before draining the rest.
- While the pasta is cooking, take the chicken breasts and season them with salt, black pepper, and Italian seasoning. Heat a skillet over medium-high heat and add the olive oil. Once hot, sear the seasoned chicken breasts for about 6 to 7 minutes on each side until cooked through. Remove and let rest.
- In the same skillet, reduce the heat to medium, melt the butter, and add the minced garlic, sautéing until fragrant. Gradually pour in the heavy cream, then add Parmesan cheese, stirring continuously until melted and smooth. If the sauce is thick, add reserved pasta water to reach desired consistency. Toss cooked pasta in the sauce.
- Slice the rested chicken and lay over the pasta. Optionally, sprinkle additional Parmesan cheese and black pepper on top before serving warm.
Notes
For gluten-free, swap penne pasta with a gluten-free alternative. Ensure chicken is cooked to 165°F.
