  • 1 lb Shrimp, peeled and deveined
  • 4 oz Cream Cheese, softened
  • 1 cup Shredded Mozzarella
  • ½ cup Grated Parmesan
  • 1 tsp Garlic Powder
  • 1 tsp Italian Seasoning
  • Salt & Black Pepper, to taste
  • 8 soft Flour Tortillas
  • 2 tbsp Butter, melted
  • ½ tsp Garlic Salt
  • ½ tsp Dried Parsley

Instructions

  1. Begin by preparing the shrimp filling, which is the star of these roll-ups. In a large mixing bowl, combine softened cream cheese, shredded mozzarella, grated Parmesan, garlic powder, and Italian seasoning. Use a spatula to mix these ingredients until you achieve a smooth and creamy consistency. Once well-blended, gently fold in the peeled and deveined shrimp, being careful not to over mix.
  2. Next, it’s time to assemble your roll-ups. Start by warming the flour tortillas slightly so they become pliable and easy to roll without tearing. Spoon a generous amount of the shrimp mixture down the center of each tortilla, making sure not to overfill. After spreading the filling out evenly, fold in the sides and roll it tightly from the bottom up. Place each roll-up seam side down in the greased baking dish.
  3. In a small bowl, mix the melted butter with garlic salt and dried parsley. Brush this mixture generously over the tops of each roll-up for added flavor and a gorgeous golden brown finish. Bake in the preheated oven at 375°F (190°C) for about 18 to 20 minutes, or until they are golden and bubbly.

Notes

Make sure to not over-mix the filling as it can turn the texture gummy.
