Description
This Creamy Garlic Shrimp Potatoes is a delightful blend of shrimp and creamy mashed potatoes.
Ingredients
Scale
- 1 pound big shrimp, deveined and peeled
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 2 tablespoons olive oil
- Salt and pepper, adjust to your liking
- 4 minced garlic cloves
- 1 cup of rich heavy cream
- Fresh thyme leaves for sprinkling on top
- 2 tablespoons unsalted butter
- 1 teaspoon Dijon mustard (optional but tasty!)
- 1/2 cup Parmesan cheese, grated
- About 1/4 cup butter for potatoes
- 2 pounds of peeled, cubed potatoes
- About 1/2 cup warm milk
- A pinch of salt, or more if needed
Instructions
- Begin by preparing your potatoes. Cut them into even chunks to ensure they cook uniformly. Place the cubed potatoes in a large pot and cover them with water. Bring the water to a rolling boil and let the potatoes cook for about 15 minutes or until fork-tender. Once they are done, drain the water and return them to the pot for mashing. Adding butter and warm milk, mash them until they’re creamy and smooth. Season with salt to taste, and cover to keep warm while you work on the shrimp.
- While your potatoes are cooking, it’s time to prepare the shrimp. In a bowl, combine the peeled shrimp with olive oil, garlic powder, paprika, and a sprinkle of salt and pepper. Heat a skillet over medium-high heat and add the seasoned shrimp. Sauté them for about 2-3 minutes on each side. You’ll know they’re ready when they turn a vibrant pink color. Once cooked, remove the shrimp from the skillet and set them aside, ensuring you leave any remaining oil and seasoning in the pan.
- In the same skillet, add a couple of tablespoons of butter and let it melt over medium heat. Toss in the minced garlic and cook until fragrant, around one minute. Pour in the rich heavy cream, stirring gently as it heats up. Allow the mixture to simmer slightly before adding the grated Parmesan cheese, stirring until it melts into the cream. If you’re feeling adventurous, add Dijon mustard for a tangy touch. Let the sauce bubble gently for 3-5 minutes until it thickens to your preference. Season with salt and pepper to taste.
- Now comes the fun part—plating your creation! Start by placing a generous scoop of creamy mashed potatoes on each plate. Arrange the sautéed shrimp beautifully over the mashed potatoes. Finally, drizzle the luscious garlic Parmesan sauce generously over the entire dish. To elevate the presentation, sprinkle fresh thyme leaves on top. Enjoy your delicious Garlic Shrimp Potatoes right away!
Notes
For creamier mashed potatoes, use a potato ricer. If the sauce is too thick, add a little more cream or milk to reach your desired consistency.
