Description
This Creamy Keto Broccoli Chicken Casserole is perfect for your low-carb lifestyle.
Ingredients
Scale
- 3 cups cooked shredded chicken
- 4 cups fresh broccoli florets (steamed or blanched)
- 1 1/2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 4 oz cream cheese softened
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon paprika (optional)
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley (for garnish)
- Cooking spray or butter for greasing dish
Instructions
- Begin by shredding your cooked chicken, ensuring it’s nice and fluffy for easy mixing. If you haven’t done so already, gently steam or blanch the broccoli until it’s just tender, then drain it thoroughly to remove any excess water. Set both ingredients aside to cool slightly.
- In a large mixing bowl, combine the cream cheese, sour cream, mayonnaise, grated Parmesan, garlic powder, onion powder, paprika, and a pinch of salt and pepper. Use a hand mixer or whisk to blend these ingredients until you achieve a smooth and creamy consistency.
- Now, it’s time to fold the shredded chicken and broccoli into your creamy mixture. Use a spatula to gently combine everything until the chicken and broccoli are evenly coated with the sauce.
- Grease your 9×13 casserole dish with cooking spray or butter, then spread the chicken and broccoli mixture into the dish, leveling it for even cooking. Sprinkle the top generously with the shredded cheddar and mozzarella cheese.
- Place your assembled casserole in the preheated oven and bake for 25–30 minutes, or until the top is bubbly and golden. For an extra crispy finish, broil it for 2–3 minutes just until the cheese is slightly browned.
- Once done, remove the casserole from the oven and let it sit for 5–10 minutes; this will make it easier to serve. Don’t forget to garnish with freshly chopped parsley before serving.
Notes
Make sure to drain your broccoli well; excess moisture can result in a runny casserole.
