  • 1 (4 oz) can green chiles
  • ½ cup heavy whipping cream
  • 4 oz cream cheese, cubed
  • 3 cups cooked rotisserie chicken, shredded

Instructions

  1. Start by heating the olive oil in a large soup pot over medium-low heat. Once the oil is shimmering, add the chopped onion and cook until it’s softened and translucent, about 3 to 4 minutes. This step adds a foundational flavor to your chili. When the onion is ready, stir in the minced garlic and continue cooking until the garlic is fragrant and just golden, taking care not to let it burn.
  2. Next, it’s time to introduce the spices! Sprinkle in the dried oregano, ground cumin, salt, black pepper, paprika, and cayenne pepper. Give everything a good stir and sauté for about one minute to toast the spices slightly, which will enhance their flavors and aroma.
