  • 2 garlic cloves, minced
  • 1 lemon, zested and juiced
  • 2 ½ cups low-sodium chicken broth
  • ¼ cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions

  1. Begin by heating a non-stick skillet over medium-high heat. In a separate saucepan, add a splash of olive oil and let it warm. Once heated, add the minced garlic and sauté it for no longer than 30 seconds.
  2. Next, add the orzo pasta into the saucepan and lightly toast it with the garlic. Pour in the chicken broth, and gently mix to ensure the orzo is evenly coated in the liquid. Cook for about 10-12 minutes until it becomes tender and creamy.
  3. When the orzo has reached the desired tenderness, gently stir in the heavy cream, lemon zest, lemon juice, grated Parmesan cheese, and fresh spinach.
  4. Season the salmon fillets with salt and pepper. In your preheated skillet, place the salmon fillets skin-side down. Sear the salmon for about 3-4 minutes per side, or until golden brown and cooked through.
  5. Spoon the creamy orzo onto a plate, topping it with the beautifully seared salmon. Garnish with additional lemon zest if desired.
