- 1 1/4 cups orzo pasta
- 3 cups vegetable broth, warmed
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese, plus extra for serving
- 1/2 teaspoon salt or to taste
- 1/4 teaspoon black pepper
- Pinch of crushed red pepper flakes (optional)
Instructions
- In a large skillet, heat the olive oil over medium heat. Start by adding the finely chopped onion, stirring frequently for about 2 to 3 minutes until it becomes softened and translucent. Once the onions are ready, introduce the minced garlic into the skillet. Stir it in and allow it to cook for approximately 30 seconds, just until fragrant.
- Now it’s time to add the sliced mixed mushrooms along with the fresh thyme. The mushrooms will release their moisture and caramelize beautifully—this process takes about 5 to 7 minutes. Make sure to stir occasionally to ensure even cooking.
- Once your mushrooms have nicely browned, stir in the orzo pasta, allowing it to toast lightly in the skillet for 1 to 2 minutes.
- Next, pour in the warmed vegetable broth into the skillet. Give everything a good stir to combine. Bring the mixture to a gentle simmer while covering the skillet loosely. Lower the heat to medium-low and let it cook uncovered for about 10 to 12 minutes. Stir occasionally to prevent the orzo from sticking to the bottom.
- Once the orzo is cooked to perfection, reduce the heat further and stir in the heavy cream and grated Parmesan cheese. This will enrich the mixture, giving it a luxurious creaminess.
- Finally, season your dish with salt, black pepper, and a pinch of crushed red pepper flakes if you desire a touch of heat. Stir in the chopped fresh parsley, reserving a bit for garnish. Serve hot, plated generously and topped with extra Parmesan and parsley.
