Description

A creamy and delicious orzo dish that features roasted butternut squash and fresh spinach.


Ingredients

  • 1 cup orzo
  • 2 cups butternut squash, diced
  • 2 cups fresh spinach
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the butternut squash with olive oil, salt, and pepper, then roast for 25 minutes.
  3. In a pot, sauté onion and garlic until translucent.
  4. Add the orzo and broth, cooking until the orzo is al dente.
  5. Stir in the heavy cream, spinach, and roasted squash.
  6. Cook until spinach wilts and everything is heated through.
  7. Season to taste and serve warm.

Notes

For a lighter version, substitute heavy cream with almond milk.
