  • 1/4 cup honey (for drizzling on top)

Instructions

  1. Begin your culinary adventure by taking a medium-sized bowl and combining the softened cream cheese, powdered sugar, vanilla extract, and honey. Use a hand mixer or a whisk to blend the ingredients smoothly. Aim for a creamy consistency that’s thick enough to hold its shape but soft enough to be easily scooped.
  2. Now it’s time to get your hands a little messy, in the best way! Using a tablespoon, scoop out small portions of the cheesecake mixture. Roll each portion between your palms to form evenly sized balls.
  3. In a separate bowl, mix the crushed pistachios with the melted butter. This combination not only adds flavor but also helps the pistachios stick to the truffles. Take each cheesecake ball and gently roll it in the pistachio mixture until fully coated.
  4. Once coated, place the truffles on a parchment-lined tray, ensuring they have enough space between them to avoid sticking. Drizzle your remaining honey over the truffles.
  5. Your truffles are almost ready! Now, pop the tray into the refrigerator and let them chill for at least 30 minutes.
