  • 1 cup whole milk
  • 1 cup freshly grated Parmesan cheese
  • 0.5 cup grated mozzarella cheese (optional)
  • 0.25 teaspoon black pepper
  • Salt, to taste
  • 0.25 teaspoon crushed red pepper flakes (optional)
  • 0.5 cup reserved pasta water (as needed)
  • Chopped parsley, for garnish

Instructions

  1. Begin by marinating your steak tips to boost their flavor. Combine the cubed steak with olive oil, Cajun seasoning, smoked paprika, and garlic powder in a bowl. Season with salt and black pepper according to your taste. Cover the bowl with plastic wrap or a lid and let it rest at room temperature for about 20 to 30 minutes.
  2. While the steak marinates, bring a large pot of salted water to a boil. Add the rigatoni pasta and cook it according to package instructions until it's al dente. Reserve half a cup of the pasta water, then drain the pasta.
  3. Next, heat a cast iron skillet or a large sauté pan over medium-high heat. Add one tablespoon of butter to the pan, allowing it to melt and become bubbly. Add the marinated steak tips, sear for about 2 to 3 minutes on each side, or until cooked through.
