  • 2 pounds Yukon Gold potatoes
  • 1 head garlic
  • 4 tablespoons butter
  • ¾ cup whole milk or heavy cream (warmed)
  • 1 teaspoon salt (plus more for boiling water)
  • ½ teaspoon black pepper
  • 1 pound pork sausage (or sausage of choice)
  • 1 small yellow onion, diced
  • 3 tablespoons all-purpose flour
  • 2 cups chicken or beef broth
  • 1 tablespoon olive oil (for roasting garlic)
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Slice the top off the head of garlic, drizzle the cut end with olive oil, and wrap it tightly in aluminum foil. Roast for 35–40 minutes.
  2. Peel and chop the Yukon Gold potatoes into even chunks and boil in salted water for 15–20 minutes until fork-tender. Drain thoroughly.
  3. Return the drained potatoes to the pot, squeeze in roasted garlic, add butter and warmed milk or cream, mash to a smooth consistency, and season with salt and pepper.
  4. In a skillet, cook pork sausage over medium heat until browned. Remove sausage but leave drippings.
  5. Sauté diced onion in the drippings for 4–5 minutes until golden. Sprinkle flour over onions, stir for 1–2 minutes to form a roux.
  6. Gradually whisk in broth, simmer for 4–5 minutes until thickened.
  7. Return sausage to skillet, mix, and serve over creamy mashed potatoes, garnished with parsley if desired.

Notes

This dish can be made vegetarian by substituting the sausage with plant-based options.
