- 2 pounds Yukon Gold potatoes
- 1 head garlic
- 4 tablespoons butter
- ¾ cup whole milk or heavy cream (warmed)
- 1 teaspoon salt (plus more for boiling water)
- ½ teaspoon black pepper
- 1 pound pork sausage (or sausage of choice)
- 1 small yellow onion, diced
- 3 tablespoons all-purpose flour
- 2 cups chicken or beef broth
- 1 tablespoon olive oil (for roasting garlic)
- 1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Slice the top off the head of garlic, drizzle the cut end with olive oil, and wrap it tightly in aluminum foil. Roast for 35–40 minutes.
- Peel and chop the Yukon Gold potatoes into even chunks and boil in salted water for 15–20 minutes until fork-tender. Drain thoroughly.
- Return the drained potatoes to the pot, squeeze in roasted garlic, add butter and warmed milk or cream, mash to a smooth consistency, and season with salt and pepper.
- In a skillet, cook pork sausage over medium heat until browned. Remove sausage but leave drippings.
- Sauté diced onion in the drippings for 4–5 minutes until golden. Sprinkle flour over onions, stir for 1–2 minutes to form a roux.
- Gradually whisk in broth, simmer for 4–5 minutes until thickened.
- Return sausage to skillet, mix, and serve over creamy mashed potatoes, garnished with parsley if desired.
Notes
This dish can be made vegetarian by substituting the sausage with plant-based options.
