Instructions

  1. Begin by bringing a large pot of salted water to a vigorous boil. Add in the rotini pasta and cook it until it is just shy of al dente—around 8-10 minutes. Before draining, remember to save a half cup of the pasta water, which will later enhance the creaminess of the sauce. Once cooked, drain the pasta and set it aside.
  2. Take your sirloin steak, ensuring it is dry by patting it down with paper towels. This helps achieve a proper sear. Cut the steak into bite-sized cubes, then season with salt, pepper, smoked paprika, garlic powder, and chili flakes.
  3. In a generously sized skillet, heat olive oil over medium-high heat. Once the oil is shimmering, scatter the steak pieces into the pan, ensuring space around each piece. Sear the steak for about 4-6 minutes, turning to brown all sides, locking in its juices and forming a savory crust. Remove the steak from the skillet and set it aside on a plate.
  4. In the same skillet, lower the heat to medium and add the unsalted butter. Allow it to melt, then introduce the minced garlic. Sauté the garlic for around 30 seconds, just until it releases its mouthwatering aroma. Proceed by stirring in the tomato paste, crushed red pepper, and onion powder.
  5. Deglaze your skillet by adding the reserved pasta water or beef broth. Pour in the heavy cream, stirring gently as the mixture begins to thicken. After simmering for 3-4 minutes, the sauce should become distinctly creamier.
  6. Introduce the drained pasta to your creamy sauce, stirring to coat the pasta evenly. Once the pasta is well coated, return the cooked steak to the pan. Let the entire dish heat through for an additional 1-2 minutes. Finally, garnish with freshly chopped parsley and serve hot.
