  • 3 tablespoons tomato paste
  • 56 sun-dried tomatoes, chopped (or substitute with cherry, grape, or roasted tomatoes)
  • 12 tablespoons Tuscan spice blend
  • Sea salt, to taste
  • 1 ½ cups heavy cream
  • 1 cup vegetable or seafood stock (chicken stock also works)
  • 3 tablespoons white cooking wine
  • Juice of ½ lemon
  • 1 cup fresh kale, chopped
  • 1 cup parmesan cheese, freshly grated (plus more for serving)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat the salmon dry, drizzle with olive oil, and season with Tuscan spices and sea salt.
  3. Roast the salmon for 15–20 minutes until cooked through and flaky.
  4. In a skillet, heat olive oil and sauté minced garlic until fragrant. Add Tuscan spice blend, tomato paste, and sun-dried tomatoes.
  5. Pour in heavy cream, seafood stock, white wine, and lemon juice. Let it thicken.
  6. Add parmesan cheese and chopped kale until softened.
  7. Nestle roasted salmon into the sauce and simmer for 5–6 minutes before serving.
