- 1 cup dry orzo pasta
- 2 1/4 cups vegetable broth or chicken broth

- 1/2 cup milk or half-and-half
- 1/2 cup freshly grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 1/4 teaspoon red pepper flakes
Instructions
- To start, heat the olive oil in a large skillet over medium heat. Once hot, add the minced garlic along with the chopped sun-dried tomatoes. Allow these to sauté for 1–2 minutes, stirring frequently until they become fragrant and tender.
- Next, add the dry orzo to the skillet. Stir it in the pan for about 1–2 minutes to toast it lightly.
- Pour in the vegetable or chicken broth and bring the mixture to a gentle simmer. Stir occasionally and let it cook for approximately 8–10 minutes.
- Once the orzo is cooked to your liking, reduce the heat and gently stir in the milk or half-and-half.
- Finally, sprinkle the freshly grated Parmesan cheese into the mix. Stir until it melts and creates a luscious creamy sauce.
Notes
Make sure to stir the orzo frequently while it simmers to prevent it from sticking to the bottom of the skillet.
