  • 1 cup dry orzo pasta
  • 2 1/4 cups vegetable broth or chicken broth
  • 1 cup baby spinach
  • 1/2 cup milk or half-and-half
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 teaspoon red pepper flakes

Instructions

  1. To start, heat the olive oil in a large skillet over medium heat. Once hot, add the minced garlic along with the chopped sun-dried tomatoes. Allow these to sauté for 1–2 minutes, stirring frequently until they become fragrant and tender.
  2. Next, add the dry orzo to the skillet. Stir it in the pan for about 1–2 minutes to toast it lightly.
  3. Pour in the vegetable or chicken broth and bring the mixture to a gentle simmer. Stir occasionally and let it cook for approximately 8–10 minutes.
  4. Once the orzo is cooked to your liking, reduce the heat and gently stir in the milk or half-and-half.
  5. Finally, sprinkle the freshly grated Parmesan cheese into the mix. Stir until it melts and creates a luscious creamy sauce.

Notes

Make sure to stir the orzo frequently while it simmers to prevent it from sticking to the bottom of the skillet.
