Instructions

  1. Begin by heating a skillet over medium-high heat. Add the ground beef to the hot skillet, breaking it apart with a spatula as it cooks. Continue to stir until the beef is browned all the way through, which should take about 5-7 minutes. Once cooked, drain any excess grease that may be in the pan. Next, stir in the taco seasoning and enchilada sauce into the skillet, mixing thoroughly to ensure the meat is well-coated. Let it simmer for about 2-3 minutes, allowing the flavors to evolve together. After this, remove from the heat and set aside.
  2. While the beef is cooling, it’s time to prep the tortillas. Wrap them in a damp paper towel and place them in the microwave. Heat for approximately 30-60 seconds until they become soft and pliable; this will prevent them from cracking while you fill them. Once warmed, use a brush to apply olive oil to one side of each tortilla – this will help achieve that refreshing golden crisp when baked.
  3. Now comes the fun part – assembling your tacos! Place the tortillas on a baking sheet, with the oiled side facing down. On one half of each tortilla, sprinkle some cheese, followed by a generous portion of the seasoned beef mixture. Top off with an additional sprinkle of cheese for that glorious melty finish. Carefully fold each tortilla over to seal in the delicious filling, making sure they are closed tightly.
