- 2 cups cubed butternut squash (about 300g)
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and black pepper, to taste
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (use panko for extra crunch)
- ¼ cup crumbled feta cheese
- 3 tbsp honey
- 1 tsp crushed red pepper flakes
- 2 tbsp chopped fresh parsley
- Oil for shallow frying
Instructions
- Begin by preheating your oven to 400°F (200°C). In a mixing bowl, toss the cubed butternut squash with olive oil along with garlic powder, onion powder, salt, and pepper. Spread the seasoned squash cubes out on a lined baking sheet and roast for about 25–30 minutes or until tender.
- While the squash cools, set up a breading station with flour, beaten eggs, and breadcrumbs. Dredge each piece of squash in flour, dip in egg, and roll in breadcrumbs.
- Heat oil in a large skillet over medium heat. Fry the coated squash bites for 2–3 minutes per side until golden brown.
- In a separate pan, combine honey and crushed red pepper flakes over low heat, stirring until warm. Stir in crumbled feta cheese to create a drizzle.
- Arrange the bites on a platter and drizzle with the honey feta sauce. Serve warm.
