Ingredients

  • 2 cups cubed butternut squash (about 300g)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper, to taste
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (use panko for extra crunch)
  • ¼ cup crumbled feta cheese
  • 3 tbsp honey
  • 1 tsp crushed red pepper flakes
  • 2 tbsp chopped fresh parsley
  • Oil for shallow frying

Instructions

  1. Begin by preheating your oven to 400°F (200°C). In a mixing bowl, toss the cubed butternut squash with olive oil along with garlic powder, onion powder, salt, and pepper. Spread the seasoned squash cubes out on a lined baking sheet and roast for about 25–30 minutes or until tender.
  2. While the squash cools, set up a breading station with flour, beaten eggs, and breadcrumbs. Dredge each piece of squash in flour, dip in egg, and roll in breadcrumbs.
  3. Heat oil in a large skillet over medium heat. Fry the coated squash bites for 2–3 minutes per side until golden brown.
  4. In a separate pan, combine honey and crushed red pepper flakes over low heat, stirring until warm. Stir in crumbled feta cheese to create a drizzle.
  5. Arrange the bites on a platter and drizzle with the honey feta sauce. Serve warm.
