  • 2 cups shredded cooked chicken
  • 3 cups tri-color coleslaw mix
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Vegetable oil for frying
  • Water for sealing wrappers

Instructions

  1. Start by heating the olive oil in a large skillet over medium heat. Add in the tri-color coleslaw mix, and sauté it until it’s just tender—around 3 to 4 minutes.
  2. Incorporate the shredded cooked chicken into the skillet, stir it in and let the mixture cook for an additional 2 to 3 minutes. Season the mixture with salt and pepper to your taste.
  3. Take an egg roll wrapper, place it on a clean surface in a diamond shape. Spoon about 1/4 to 1/3 cup of the chicken and coleslaw mixture across the center. Fold in the edges and roll tightly to seal.
  4. Heat vegetable oil in another skillet until it reaches 175–190°C (350–375°F). Fry egg rolls in batches until golden brown, about 4 to 5 minutes per batch.
