Instructions

  1. To get started, take a large mixing bowl and combine your grated sweet potato with the mashed chickpeas.

  5. Shape the mixture into patties that are about 1 inch thick.
  6. Heat olive oil in a skillet over medium heat. Cook the fritters for about 3–4 minutes per side until golden brown.
  7. Transfer to a paper towel-lined plate to drain excess oil.
