Ingredients

  • 1 can (15 oz) chickpeas, drained and mashed
  • 1/4 cup all-purpose flour (or chickpea flour for a gluten-free option)
  • 1/4 cup chopped fresh cilantro or parsley
  • 2 green onions, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground coriander (optional)
  • Salt and black pepper to taste
  • 1 large egg (or flax egg for a vegan version)
  • Olive oil for frying

Instructions

  1. Combine all key ingredients in a large bowl: grated sweet potato, mashed chickpeas, flour, cilantro, green onions, and garlic.
  2. Add ground cumin, smoked paprika, ground coriander, salt, and black pepper.
  3. Incorporate egg or flax egg and mix until the mixture holds together.
  4. Shape into small patties (8 to 10 total).
  5. Heat olive oil in a skillet over medium heat. Fry fritters for 3 to 4 minutes on each side until golden brown.
  6. Set aside on a paper towel-lined plate to drain excess oil.
  7. For the avocado sauce, blend ripe avocado, yogurt, lime juice, garlic, and olive oil until smooth.
  8. Serve fritters warm with the avocado sauce and garnish with cilantro and lime wedges.
