- 3 lbs Yukon Gold potatoes, thinly sliced
- 3 tbsp butter
- 1 head roasted garlic, mashed
- ¼ cup all-purpose flour
- 1½ cups whole milk, at room temperature
- 1 cup vegetable or chicken broth
- 1½ cups sharp cheddar cheese (½ white, ½ yellow), divided
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme leaves
- Salt and black pepper, to taste
- 1 tbsp Garlic of Eden seasoning
- 1 large yellow onion, sliced into rings
- 2 tbsp flour (for onion coating)
- 4 cups vegetable oil (for frying)
- 1 tsp kosher salt
- Fresh parsley and thyme for garnish
Instructions
- Preheat your oven to 375°F and grease your 9×13-inch baking dish.
- In a medium saucepan, melt butter over medium heat. Add flour to create a roux and whisk for 1 minute. Gradually add milk and broth, whisking until thickened. Mix in roasted garlic, herbs, seasoning, salt, and pepper, then stir in cheese until melted.
- Layer the potatoes in the baking dish, pour sauce over, and top with remaining cheese.
- Cover with foil and bake for 50 minutes, then uncover and bake for another 15 minutes until golden brown.
- Meanwhile, heat oil for frying. Toss onion rings in flour, fry until golden and crispy.
- Serve baked potatoes topped with crispy onions and garnish with parsley and thyme.
Notes
Make sure to grease the baking dish well for easy removal of the potatoes after baking. Adjust the seasoning based on your preferences.
