Ingredients

  • 1 big head cauliflower, cut into 1-inch thick slices
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1/3 cup grated Parmesan cheese
  • 2 tsp chopped fresh parsley

Instructions

  1. Begin by heating your oven to 425°F (220°C).
  2. Next, take your head of cauliflower and carefully cut it into 1-inch thick slices.
  3. Brush both sides of the cauliflower slices with olive oil and sprinkle the minced garlic, salt, and black pepper over the slices.
  4. With everything seasoned, place the baking sheet in the oven and roast the cauliflower for about 22 minutes.
  5. About 3 minutes before roasting is complete, take the baking sheet out and sprinkle the grated Parmesan cheese over the cauliflower slices.
  6. Once the cheese is melted, remove the cauliflower from the oven and sprinkle the chopped fresh parsley on top.
