  • 1 lb Brussels sprouts
  • 1/2 cup freshly grated parmesan cheese
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder (optional)
  • 2 tbsp panko breadcrumbs (optional)

Instructions

  1. Start by preheating your oven to 400°F (200°C). While that’s warming up, grab a baking sheet and line it with parchment paper, then lightly grease it with olive oil.
  2. Rinse the Brussels sprouts thoroughly under cool water, ensuring they’re free of any dirt or debris. Pat them dry with a paper towel to remove excess moisture. Next, trim the woody ends off the sprouts and slice each one in half lengthwise.
  3. In a mixing bowl, toss the halved Brussels sprouts with olive oil, salt, pepper, and the optional garlic powder.
  4. Once seasoned, add the freshly grated Parmesan and panko breadcrumbs to the bowl. Gently toss everything together.
  5. Now, arrange the sprouts cut-side down on the prepared baking sheet in a single layer. Bake in the preheated oven for 20–25 minutes, checking for doneness around the 20-minute mark.
  6. Once they’re done roasting, remove the Brussels sprouts from the oven and let them cool for about 2 minutes.

Notes

For maximum crispiness, always place sprouts cut-side down on the baking sheet to achieve perfect caramelization.
