  • 1 lb carrots, peeled & sliced into thick rounds
  • 1/4 tsp smoked paprika
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • 1/2 tsp garlic powder
  • Fresh chopped parsley, for garnish

Instructions

  1. Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup. Peel and slice your carrots into thick rounds, uniformly sized for even cooking. Bring a pot of salted water to a boil and add the carrot rounds. Cook them for approximately 10–12 minutes, or until they’re just fork-tender. This pre-boiling step ensures your carrots are soft inside while retaining a vibrant color.
  2. Once the carrots are boiled to perfection, drain and let them cool slightly so they’re easier to handle. Arrange the carrots on the prepared baking sheet. Using the bottom of a glass, gently press each round to flatten. Be careful not to over-smash them, as you want them to maintain their shape. Drizzle the carrots evenly with olive oil. Sprinkle the garlic powder, smoked paprika, salt, and pepper over the top, ensuring they’re well-seasoned for maximum flavor.
  3. With your carrots seasoned and ready, it’s time to add the cheesy touch. Distribute the grated Parmesan evenly over the carrots. Place the baking sheet in your preheated oven and roast for 20–25 minutes, flipping the carrot bites halfway through. This will ensure both sides achieve a crispy, golden texture that enhances the overall deliciousness.
  4. Once your carrot bites emerge from the oven, fragrant and beautifully crisp, garnish them with some fresh chopped parsley to add a pop of color and freshness. Serve them hot and enjoy the delightful crunch with every bite!

Notes
