Description

This Crispy Tot Chili Casserole is a symphony of flavors that brings families and friends together, embodying the true essence of comfort food.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (15 ounces) red kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes with green chilies
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 32 ounces frozen tater tots
  • 2 cups shredded cheddar cheese
  • 1 tablespoon olive oil

Instructions

  1. Begin by preheating your oven to 375°F (190°C), setting the stage for baking perfection later on. In a large skillet, heat the olive oil over medium heat. Once shimmering, add in the finely chopped onion. Cook until the onions turn translucent and soft, stirring occasionally. Introduce the minced garlic, allowing it to sauté for about a minute, releasing its fragrant oils.
  2. To your aromatic base, add the ground beef, using your spatula or wooden spoon to crumble it as it browns. This step is crucial for integrating flavors while ensuring an even cook. Once the meat has a nice brown hue, add the kidney beans, black beans, diced tomatoes, and tomato paste. Sprinkle in chili powder, cumin, paprika, salt, and pepper for a well-rounded taste. Allow this mixture to simmer gently for approximately five minutes, letting flavors meld.
  3. Lightly grease your 9×13-inch baking dish to prevent sticking and ensure easy serving. Pour the simmered chili mixture into your prepared dish, spreading it evenly with a spatula to create a uniform layer. Now, arrange the frozen tater tots over the chili, ensuring a single layer for even browning and crispiness.
  4. Place your dish into the preheated oven, baking uncovered for around 35 minutes until the tater tots develop a golden crust. After achieving the desired crispiness, bring the dish out briefly to sprinkle the cheddar cheese over the tots. Return it to the oven and bake for an additional 5–7 minutes, allowing the cheese to melt beautifully. Upon completion, let the casserole rest for 5–10 minutes before serving.
