Crockpot Chipotle Pineapple Pot Roast Bowls

Ingredients

  • 1–3 chipotle chiles in adobo, chopped
  • ¼ cup tamari or soy sauce
  • 1 tablespoon sweet or smoked paprika
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon chopped pickled ginger
  • ¼ cup tomato paste
  • ¼ cup extra virgin olive oil
  • 4 lbs beef chuck roast, halved
  • Salt and black pepper, to taste
  • 3 cups fresh pineapple chunks (divided)
  • 1 avocado, diced
  • 1 jalapeño, sliced
  • ½ cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • ½ cup mayonnaise
  • ⅓ cup sweet Thai chili sauce
  • 2 tablespoons tamari or soy sauce
  • 1 small clove garlic, grated
  • 2 teaspoons lime zest
  • 1 tablespoon chopped pickled ginger
  • 4 cups cooked rice (white, brown, or cauliflower)

Instructions

  1. Using a blender or food processor, combine extra virgin olive oil, tomato paste, tamari or soy sauce, apple cider vinegar, honey, chopped pickled ginger, chipotles in adobo, paprika, thyme, salt, and pepper. Blend until the mixture is smooth and homogenous.
  2. For the crockpot method, place the halved beef chuck roast inside the crockpot. Pour the freshly made sauce over the meat ensuring it is well-coated. Add 1½ cups of fresh pineapple chunks and one cup of water around the meat. Cover the crockpot and set it to cook on LOW for five hours or HIGH for three hours.
  3. While your roast is cooking, prepare the vibrant salsa. In a medium bowl, combine the remaining pineapple chunks with diced avocado, sliced jalapeño, chopped cilantro, and lime juice. Mix gently to retain the texture of the ingredients.
  4. In a small bowl, whisk together mayonnaise, sweet Thai chili sauce, tamari, grated garlic, lime zest, and chopped pickled ginger.
  5. Towards the end of the cooking process, shred the beef inside the crockpot using two forks. Serve the tender beef over a bed of cooked rice, trailed by a dollop of pineapple salsa and a drizzle of bang bang sauce.

Notes

Consider using canned pineapple if fresh is not available to adjust the sweetness.
