Ingredients

- 1 large cucumber
- 8 oz cream cheese, softened
- 1 tsp garlic powder
- 1 tbsp fresh dill, finely chopped (or 1 tsp dried)
- 1 tbsp chives, finely chopped
- Salt and pepper, to taste
- 10–12 cherry tomatoes, halved
- Fresh basil or parsley, for garnish (optional)
Instructions
- Begin by thoroughly washing the cucumber. After drying, cut the cucumber into ½-inch rounds using a sharp knife. If desired, use a melon baller or a small spoon to carve a shallow indent into the center of each slice, creating a perfect cradle for the herbed cream cheese.
- In a mixing bowl, combine the softened cream cheese with garlic powder, dill, chives, salt, and pepper. Mix these ingredients well until you achieve a smooth, consistent blend. This mixture will serve as the deliciously flavorful base of your cucumber bites.
- Using either a spoon or a piping bag, place a generous dollop of the herbed cream cheese onto each cucumber slice. The creamy mixture should be enough to fill the indent without spilling over.
- Slice the cherry tomatoes in half, if you haven’t done so already. Place half of a cherry tomato, cut side facing up, onto each cucumber slice atop the cream cheese. This adds a vibrant color and a burst of sweetness to each bite.
- Finish by adding a basil or parsley leaf to each bite for a fresh pop of color. These can be served immediately, or chilled until it’s time to present them to your guests.
