This Curried Chicken Lime Coleslaw with Mint Yoghurt is a burst of flavors with a healthy twist, perfect for a quick meal.

- 2 cups cooked chicken breast, shredded
- 2 tbsp curry powder
- 1 tbsp olive oil
- Juice of 1 lime
- 4 cups shredded cabbage (green or a mix of red and green)
- 1 cup shredded carrots
- 1/2 red onion, thinly sliced
- 1/4 cup chopped cilantro
- 1 cup plain Greek yogurt
- 2 tbsp chopped fresh mint
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions
- Begin by dressing the chicken. In a medium-sized bowl, combine the shredded chicken with curry powder and olive oil. Squeeze the juice of a fresh lime over the top, letting it all soak together for around 10 minutes.
- While the chicken is marinating, turn your attention to the vegetables. In a large bowl, toss together shredded cabbage, shredded carrots, thinly sliced red onion, and chopped cilantro.
- To make the mint yoghurt, stir together the Greek yogurt, freshly chopped mint, and minced garlic in a small bowl. Add a pinch of salt and pepper to taste.
- Integrate the curried chicken with the vegetable mixture. Toss the ingredients gently to ensure every bite has a little of everything. Drizzle over the mint yoghurt dressing for a harmonious blend, or alternatively, serve the dressing on the side for guests to add as they desire.
