- 1 sheet puff pastry (thawed, kept cold)
- 4 oz cream cheese (softened)
- 2 tbsp granulated sugar
- 1/2 tsp vanilla extract
- 1 tsp lemon zest
- 1 cup blueberries (fresh or frozen)
- 1 tsp cornstarch
- 1 tsp lemon juice (optional, for blueberry topping)
- 1 egg (for egg wash)
- 2 tbsp powdered sugar (optional, for garnish)
Instructions
- Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Take the thawed puff pastry sheet and carefully cut it into four or six equal squares. Score around the edge of each square.
- In a mixing bowl, combine the softened cream cheese, granulated sugar, vanilla extract, and lemon zest until smooth.
- In a saucepan over medium heat, add the blueberries, additional sugar (if desired), and a teaspoon of lemon juice, stirring gently. Cook until thickened, then add cornstarch.
- Place a spoonful of the cream cheese mixture in the center of each pastry square, topped with the cooled blueberry mixture.
- Whisk together the egg and water for the egg wash. Brush the edges of the pastry squares and bake for 18–22 minutes.
- Remove from the oven and allow to cool for about 10 minutes before transferring to a wire rack.
Notes
Ensure the puff pastry remains cold until you are ready to work with it. Let the blueberry topping cool fully before adding it to the cream cheese.
