  • 1 sheet puff pastry (thawed, kept cold)
  • 4 oz cream cheese (softened)
  • 2 tbsp granulated sugar
  • 1/2 tsp vanilla extract
  • 1 tsp lemon zest
  • 1 cup blueberries (fresh or frozen)
  • 1 tsp cornstarch
  • 1 tsp lemon juice (optional, for blueberry topping)
  • 1 egg (for egg wash)
  • 2 tbsp powdered sugar (optional, for garnish)

Instructions

  1. Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Take the thawed puff pastry sheet and carefully cut it into four or six equal squares. Score around the edge of each square.
  3. In a mixing bowl, combine the softened cream cheese, granulated sugar, vanilla extract, and lemon zest until smooth.
  4. In a saucepan over medium heat, add the blueberries, additional sugar (if desired), and a teaspoon of lemon juice, stirring gently. Cook until thickened, then add cornstarch.
  5. Place a spoonful of the cream cheese mixture in the center of each pastry square, topped with the cooled blueberry mixture.
  6. Whisk together the egg and water for the egg wash. Brush the edges of the pastry squares and bake for 18–22 minutes.
  7. Remove from the oven and allow to cool for about 10 minutes before transferring to a wire rack.

Notes

Ensure the puff pastry remains cold until you are ready to work with it. Let the blueberry topping cool fully before adding it to the cream cheese.
