- 2 1/2 cups Oreo cookies, crushed
- 6 tablespoons unsalted butter, melted
- 24 oz cream cheese, room temperature
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 2 teaspoons vanilla extract
- 3/4 cup heavy cream
- 8 oz semi-sweet chocolate chips or chopped chocolate
- 1/2 cup chocolate chips (for garnish)
Instructions
- Preheat your oven to 325°F (160°C) and prepare the Oreo cookie crust by mixing crushed cookies with melted butter. Press into a 9-inch springform pan and bake for 10 minutes.
- Beat cream cheese until smooth, then add sugar and eggs, mixing well. Incorporate sour cream and vanilla extract until creamy.
- Pour cheesecake filling over cooled crust and bake for 55-65 minutes until the center is slightly jiggly. Let cool in the oven for an hour, then refrigerate for at least 6 hours.
- Prepare chocolate ganache by heating heavy cream and pouring over chocolate chips. Stir until smooth and glossy.
- Once cheesecake is chilled, pour ganache over the top and garnish with chocolate chips. Slice with a hot knife for clean pieces.
