Ingredients

  • 2 1/2 cups Oreo cookies, crushed
  • 6 tablespoons unsalted butter, melted
  • 24 oz cream cheese, room temperature
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 2 teaspoons vanilla extract
  • 3/4 cup heavy cream
  • 8 oz semi-sweet chocolate chips or chopped chocolate
  • 1/2 cup chocolate chips (for garnish)

Instructions

  1. Preheat your oven to 325°F (160°C) and prepare the Oreo cookie crust by mixing crushed cookies with melted butter. Press into a 9-inch springform pan and bake for 10 minutes.
  2. Beat cream cheese until smooth, then add sugar and eggs, mixing well. Incorporate sour cream and vanilla extract until creamy.
  3. Pour cheesecake filling over cooled crust and bake for 55-65 minutes until the center is slightly jiggly. Let cool in the oven for an hour, then refrigerate for at least 6 hours.
  4. Prepare chocolate ganache by heating heavy cream and pouring over chocolate chips. Stir until smooth and glossy.
  5. Once cheesecake is chilled, pour ganache over the top and garnish with chocolate chips. Slice with a hot knife for clean pieces.
