  • ½ cup vegetable oil (neutral oil like canola works best)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup hot water (enhances the cocoa flavor)
  • For the Ganache: 1 cup heavy cream
  • 8 ounces dark chocolate, chopped (use high-quality chocolate for the best ganache)
  • 1 cup cherry pie filling (store-bought or homemade)
  • Maraschino cherries for garnish

Instructions

  1. Prepare the cake batter by combining dry ingredients in a mixing bowl, then adding wet ingredients and mixing until smooth.
  2. Bake the cake layers in prepared pans at 350°F (175°C) for 25-30 minutes, then cool.
  3. Make the ganache by simmering cream, mixing with chocolate until smooth, and allowing to cool slightly.
  4. Assemble the cake by layering cooled cake with cherry filling and ganache.
