  • 1/2 cup semi-sweet chocolate, finely chopped (for ganache)

Instructions

  1. Begin your baking adventure by preheating your oven to 350°F (175°C) and preparing a 9-inch springform pan with parchment paper.
  2. In a mixing bowl, combine the melted butter and granulated sugar, whisking until nicely blended. Add the eggs and pure vanilla extract, mixing until smooth and creamy.
  3. Sift in the all-purpose flour, cocoa powder, baking powder, and salt, stirring gently until combined.
  4. Pour the batter into the prepared pan and bake for 18 to 20 minutes. Allow it to cool completely in the pan, then refrigerate for at least 20 minutes.
  5. Melt the semi-sweet chocolate in a double boiler until smooth, then cool to room temperature. Whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  6. Fold one-third of the whipped cream into the melted chocolate, then fold in the remaining cream gently.
  7. Spread the mousse over the cooled cake and chill in the refrigerator for at least 2 hours.
  8. For the ganache, heat the heavy cream until it simmers, then pour it over the chopped chocolate, stirring until smooth. Let it cool slightly.
  9. Pour the ganache over the mousse layer, tilting the pan to spread evenly. Refrigerate for at least 1 hour to set.
