- 1 1/2 cups crushed digestive biscuits (or graham crackers)
- 1/2 cup unsalted pistachios, chopped
- 1/4 cup melted butter
- 1/2 cup heavy cream
- 200g dark chocolate (70% cocoa)
- 2 tablespoons sugar
- 1/4 teaspoon sea salt
- 1/2 cup unsalted pistachios, roughly chopped (for garnish)
- 1 teaspoon vanilla extract
- 1/4 cup chopped chocolate (for garnish)
Instructions
- Preheat oven to 350°F (175°C). Combine crushed biscuits and chopped pistachios, mix in melted butter, and press into tart pan.
- Bake crust for 10 minutes, then remove and cool completely.
- Heat heavy cream until steaming, add dark chocolate, and stir until smooth.
- Add sugar, vanilla, and sea salt. Mix thoroughly.
- Pour chocolate filling over cooled crust and refrigerate for at least two hours.
- Garnish with chopped pistachios and chocolate shavings before serving.
Notes
Chill the tart for at least two hours but aim for overnight for a firmer texture.
