Ingredients

  • 1 1/2 cups crushed digestive biscuits (or graham crackers)
  • 1/2 cup unsalted pistachios, chopped
  • 1/4 cup melted butter
  • 1/2 cup heavy cream
  • 200g dark chocolate (70% cocoa)
  • 2 tablespoons sugar
  • 1/4 teaspoon sea salt
  • 1/2 cup unsalted pistachios, roughly chopped (for garnish)
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped chocolate (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Combine crushed biscuits and chopped pistachios, mix in melted butter, and press into tart pan.
  2. Bake crust for 10 minutes, then remove and cool completely.
  3. Heat heavy cream until steaming, add dark chocolate, and stir until smooth.
  4. Add sugar, vanilla, and sea salt. Mix thoroughly.
  5. Pour chocolate filling over cooled crust and refrigerate for at least two hours.
  6. Garnish with chopped pistachios and chocolate shavings before serving.

Notes

Chill the tart for at least two hours but aim for overnight for a firmer texture.
