Ingredients

  • 1/3 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 12 large marshmallows, halved
  • 1/2 cup chocolate ganache, for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. Beat softened butter with granulated and brown sugar until light and fluffy, then add egg and vanilla.
  4. Gradually mix in dry ingredients until just combined.
  5. Drop dough onto prepared baking sheet, spacing them apart, and bake for 10-12 minutes.
  6. Press marshmallow halves onto cookies and bake for an additional 2 minutes.
  7. Let cool before drizzling with chocolate ganache.

Notes

Cookies should look slightly underbaked when removed from the oven. They continue to cook as they cool.
