Instructions
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) and prepare your pie dish with the pie crust.
- In a medium pot, combine brown sugar, butter, and thick cream over medium-high heat, stirring constantly until thickened.
- In a large bowl, whisk together granulated sugar, corn syrup, melted butter, eggs, and vanilla, then fold in pecans and chocolate chips.
- Pour the filling into the pie crust over the caramel layer and add coconut if desired.
- Bake for 50 to 60 minutes until the filling is firm with a slight jiggle, then cool on a wire rack.
