  • 4 cups cubed brioche or challah bread
  • 4 large eggs
  • 1 ¾ cups whole milk
  • ¾ cup heavy cream
  • ⅔ cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 ½ teaspoons ground cinnamon
  • 2 tablespoons melted butter
  • ¼ teaspoon salt
  • 3 tablespoons butter (for the sauce)
  • ½ cup heavy cream (for the sauce)
  • ⅓ cup granulated sugar (for the sauce)
  • 1 teaspoon vanilla extract (for the sauce)

Instructions

  1. Begin by preheating your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cut the brioche or challah bread into 1-inch cubes and toast if not stale.
  3. In a mixing bowl, whisk together eggs, milk, heavy cream, sugar, vanilla, cinnamon, and salt.
  4. Place cubed bread in the baking dish and pour custard over it, pressing down to soak.
  5. Drizzle melted butter over the top and cover with foil. Bake for 30 minutes, then uncover and bake for an additional 15-20 minutes.
  6. While baking, melt remaining butter for the sauce, mix with sugar and cream until thickened, then add vanilla.
  7. Let cool for 5-10 minutes before serving, topped with warm vanilla sauce.

Ensure that the bread is adequately dried out to absorb the custard well—this prevents a mushy texture.
