- 2 lobsters, cooked and meat removed
- 1 tablespoon butter
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- 1/4 teaspoon Old Bay seasoning
- Salt and pepper, to taste
- 4 New England-style rolls
- 1 tablespoon chives, chopped
- 1 tablespoon celery, finely chopped
- 1 tablespoon lemon zest
- Lettuce leaves, for garnish
Instructions
- If your lobster is not already cooked, boil them until done. Carefully remove the meat from the shells and chop into bite-sized pieces.
- In a small saucepan, melt butter over medium heat and add chopped lobster meat, stirring gently to warm through.
- In a mixing bowl, combine mayonnaise, lemon juice, Old Bay seasoning, salt, and pepper to create the dressing.
- Add warm lobster to the dressing, folding gently to coat. Incorporate chives, celery, and lemon zest for added freshness.
- Toast New England-style rolls on a grill or skillet until golden brown.
- Stuff each toasted roll with lobster mixture and top with lettuce. Serve immediately.
Notes
For best flavor, use fresh lobster. Prepare sauce and vegetables in advance to save time. Pair with Sauvignon Blanc for a complementary beverage.
